个人简介
I study food, people, and land, and how they shape each other through cooking and eating. My work traces the relationships between flavour, ecology & evolution, and biocultural diversity, and their politics in the Anthropocene.
My doctoral research investigated how humans and microbes shape each other in novel fermentation practices among culinary innovators in Copenhagen.
I also work with makers to help them refine their methods and products.
