Bio
A/Prof Said Ajlouni is USA trained food scientist with more than 25 years teaching and research experience at the University of Melbourne. He received his PhD from the University of Pennsylvania, USA in 1991. He also holds a research master’s degree from the University of Georgia. Currently he is an Associate Professor in Food Science at the School of Agriculture & Food, The University of Melbourne. His principle research interests are food safety and quality, and food antioxidants and functionality, with special emphasis on minimally processed foods. He is also interested in the probiotic and prebiotic applications in the dairy food systems.
